Can you describe the types of clients that would be attracted to the Captain’s Lounge?
The Captain’s Lounge will attract a variety of clients.  Firstly, those with an appreciation of food and wine who are seeking a food experience that they would not necessarily generate at home. Then there are those people who are seeking an ambient space to enjoy a wine or snack alone or with friends that offers a point of difference to a pub or bistro atmosphere. In addition there will be clients who are looking for a venue to host their special occasion, whether it be a birthday, wedding or corporate event.
What excites both Tony and yourself about fresh local produce?
For someone who is passionate about real food and real flavors there is nothing quite like knowing exactly where your produce comes from and how it has been treated or grown. At home, we pride ourselves on growing as much of our own fresh produce as possible and we believe in educating our daughter about where her food comes from and what constitutes “real food”.

There is a plethora of excellent products coming out of the South Gippsland area that Tony will be utilising on his menu. Tony’s dream would be to source everything locally, which is not always fully attainable in a commercial setting, but will strive to support what local producers have on offer.

When did you fall in love with food?
Growing up in the Barossa Valley, Tony was surrounded by food and wine culture. His father’s market garden background and 40 years spent in the wine industry certainly made a strong impression but his love of food and his creative expression also seems to have an innate quality to it.  Beginning his career at 14 years of age, he was employed as a Kitchen Hand at 1918 Bistro and Grill while still at school.  He then went on to complete his apprenticeship there and learnt under a very strict and stern Head Chef! 23 years later his love of food and creative interpretations have grown and evolved through a variety of positions both in Australia and abroad.
Why do you love Inverloch?
Inverloch is a beautiful town on many levels. It seriously has some of the best coastline that we have seen in Australia (well the East Coast which we explored on our year-long caravan adventure), there is a great sense of community and an enlightening level of open mindedness.  We have made some really strong and special connections here.  It is also provides us with a peaceful environment that is perfect for raising a family.

How will you bring a new feel to the Captains Lounge?
Working with the existing space and branding of the Captain’s Lounge we want to create a warm, welcoming and ambient atmosphere for locals and visitors to enjoy. The main differences will be noted in the food offering, the service and the atmosphere. With an injection of new energy in the kitchen and on the floor, we want to make the Captain’s Lounge a place that people are drawn to visit.  Music will also play a part in helping to create the desired atmosphere as we believe it has such a powerful impact on the feeling of a space. We are carefully creating playlists as well as recruiting local acoustic artists to be involved in regular gigs.

The Captain’s Lounge will have offerings for a variety of clients.  For those after a relaxed wine or beverage of choice after work or to catch up with friends there is plenty of bar space and lounge seating as well as the beautiful outdoor balcony.  Drinks may then evolve into casual small share plates to snack on or a sneaky dessert.  For those after a more extensive dining experience, the CL will also offer a relaxed a la carte fine dining menu. Tony’s menu will reflect an emphasis on utilising seasonal, local produce to create innovative contemporary combinations that surprise and tempt the taste buds. The Captain's Lounge also provides a function space that can be booked for special occasions.
