Brent Sinclair has been a foodie all of his life; he has a vision and mission to deliver world-class food using the best available produce from a range of local suppliers. Today we sit down for 5 minutes to talk all things 'quick easy evening meals'.
1. Brent why do you love this dish - Portuguese Chicken?
I love this dish because it is simple, with fresh ingredients, it's not expensive and really has real flavor. With a bit of insight, you can prepare quick, affordable, tasty and nutritious meals, the secret is using fresh herbs and spices, because they offer so much taste every time.
2. This dish is relatively quick to cook?
Yes, cooking tasty food doesn’t have to be a slow process – you can make a delicious meal in five minutes if you know what you’re doing. You can eat this meal for dinner and then take it to work and eat for lunch. You save money and it will probably be tastier than something you buy from a shop.
However, it also depends on what you are cooking. Some dishes are simple and they only take one pot and a chopping board and a knife to put together. Others use more equipment. I find working into an empty sink or dishwasher, and having a bowl for rubbish near you when you prep, really helps minimize the mess and optimizes your time.
3. How do you come up with new recipes?
I get my inspiration from the seasons, what's fresh, and what smells good. I guess I’ve found what works for me when I’m coming up with new ideas is to create a dish around seasonal ingredients.
Every so often I see something online and I think “Yes, I can work with that” – and I’ll get into the kitchen and explore.
